Ingredients
- 500 g lean ground turkey
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 120 ml water
- 500 g cooked rice
- 240 g drained black beans (about 1 x 15 oz / 425 g can), rinsed
- 150 g chopped tomatoes or salsa
- 100 g shredded lettuce
- 100 g plain Greek yogurt
- Lime wedges, for serving
Instructions
1. Heat olive oil in a skillet over medium-high heat. Add turkey and cook, breaking it up with a spoon.
2. Add cumin, paprika, chili powder, oregano, and salt. Continue cooking until no pink remains and the turkey reaches 74°C / 165°F.
3. Add water and simmer for 2–3 minutes so the seasoning coats the turkey.
4. Divide rice among bowls and top with turkey, black beans, lettuce, salsa, Greek yogurt, and lime.

Store turkey, rice, and beans together for up to 3 days. Keep lettuce, salsa, yogurt, and lime separate until serving.
